The Two-Ingredient Banana & Egg Pancakes

banana-egg-pancakesThese pancakes are so tasty and easy to make that you may quickly end up making them a regular part of your diet. Also, it doesn’t hurt that they are made up of whole, nutrient-dense foods and are packed with complete protein, healthy fats, micronutrients, and some simple sugars to fuel your workouts. I’ve been eating these every day for the last several days, often for breakfast or lunch. They only take about 10-20 minutes to make, depending on the size of your batch. I like to use 4 eggs+2 bananas, but 2 eggs+1 banana is probably a better fit if you’re not that hungry.

Step-by-step instructions

1. Gather the necessary ingredients. Use GHEE, coconut oil, or butter for cooking

2. Mash the bananas with a fork

3. Add the eggs, and use a whisk to mix it all together

4. Cook for 1-3 minutes on each side over low-medium heat

5. Voilà

6. Eat them plain or with some butter, coconut oil, and/or fruit
